The Som Tam at Sriracha is made in a wooden lesung as opposed to the stone mortar and pestle used throughout Southeastern Asia. This allows to chef to gently extract the fruity acidity of raw papaya, green mango and malta oranges.
A hit of soya, honey chilli dressing, palm sugar and lime balances the flavour in this crunchy, popular salad.
