In Conversation With Abhijit Saha (Part 4)

Abhijit Saha, one of India’s most formidable chefs and creator of restaurant brands such as Caperberry, Fava, Saha and Rock Salt talks to Food Lovers Editor, Kripal Amanna, about the progress that Indian food has made in restaurants.


“Indian food is beginning to get its due… as opposed to just North and South Indian restaurants of the past, many regional Indian restaurants have now come up making Indian food more interesting,” says Chef Abhijit Saha. He also speaks of interesting home cooking that is now begining to make an appearance on restaurant menus.
 
He believes “Indian cuisine has the potential of becoming a world cuisine,” given its history of over 2,000 years.
