Cauliflower Bezule

The cauliflower in this recipe is cooked twice, first in a spicy batter, and then tossed with yoghurt, green chillies and fresh curry leaves.

This Mangalorean dish translates literally to ‘tossed, red cauliflower’! Chef Balaji Balachandran coats the cauliflower florets in a special spice mix, before frying them to golden perfection. The fried cauliflower is then tossed vigorously in a yoghurt and chilli mix.
It’s perfect for snacking or to serve as an accompaniment to your favourite tipple!
