Grilled Sausages in Harissa

Sausages marinated in a hot red chilli paste and grilled, served on crisp bread.
TOTAL TIME: 40 minutes
LEVEL: Moderate
300 gm
chicken sausages
50 gm
dry red chillies
50 ml
synthetic vinegar
30 ml
olive oil
5 gm
iceberg lettuce (medium-sized)

1. De-seed the chillies and soak overnight in vinegar; drain vinegar and grind chillies into rough paste.
2. To make harissa cook the chillies paste using 25 ml. of olive oil, till the oil comes out.
3. Cut the sausages into rectangle and marinade with remaining olive oil, salt and harissa for 30 minutes.
4. Grill sausages on a pre-heated grill. Place atop lettuce leaf on a toasted baguette. Serve hot.


Note: This harissa recipe is for a marinade only, and is distinctly different from harissa used as an accompaniment.
